Defense:
Defending a target from enemies. Usually can be comfortably done with two lances, but defense targets can span from ammuniton depots to cites. Expect anywhere from a single scout 'mech to a full lance of Assault 'mechs for offense.
Offense:
Attacking a target. Not exactly the simplest mission, but you can pull these types off with a good plan and plenty of Intel.
Recon:
Gathering useful information for a future mission. Usually carried out with Scout 'mechs with advanced computer systems and signal blockin technology.
Recon and Destroy:
A recon mission with a target. Missions like these rarely go on plan. The enemy receiving reconnocance is usually ready for a strike if the Recon 'Mechs are spotted, and may recall reinforcements if a tactic like this is pulled mid-recon.
Sweep and Destroy:
Mainly takes Recon information, and deploys BattleMechs to destroy 'mechs discovered in the Recon Intel. Usually involves a Lance pitted against an enemy Lance.
Sweep, Destroy, and Rescue:
A S&D mission that involves rescuing a certain target. Might include a Convoy, Base or other target.
